2 cups thinly sliced celery
2 T butter
1.5 cups sliced green onion
1.5 lbs sliced hot dogs
2 eggs
1.5 cups milk
2 t rubbed sage
1/4 t pepper
2 boxes Jiffy corn bread mix
2 cups cheddar cheese *divided*
- saute celery in butter for 5 minutes
- add onions and saute another 5 minutes
- remove veggies to a small bowl
- saute hot dogs until lightly browned. mix veggies into hot dogs and set aside 1 cup of the mix
- in a large bowl, whisk eggs, milk, sage & pepper
- add veggies and hot dogs
- stir in Jiffy mixes
- stir in 1 1/2 cups cheese
- move mix to a 9x13 pyrex and top with remaining veggies and cheese
- bake uncovered for 30 minutes at 400F until golden brown
